Onion Chutney

Onion is a staple ingredient in everybody's home and should be present in your kitchen pantry almost on all days. Combined with urad dal, red chillies and tamarind; they can be turned into a lovely, simple and healthy chutney for your idli/ dosa in minutes. 

Ingredients
1/4 cup urad dal
3 red chillies
1 large onion
1 inch tamarind piece
1/4 ts hing
1/2 ts cumin seed (optional)
1/2 ts pepper (optional)

To temper
Sesame oil as per need
1 ts mustard seed
Few curry leaves

Preparation

- In a wide skillet add a teaspoon of oil. Once hot add the urad dal. Fry them in medium flame until they turn slight brownish and gives a good aroma.
- Next add the cumin seed, peppercorn and hing. Toss them for a few seconds.
- Switch off the flame. Add the red chillies and tamarind piece. Add sufficient salt. Mix everything well. Take them out in a plate and allow the contents to cool.
- In the same skillet add extra oil and fry the onions until they turn translucent and gives a good aroma. Add little salt if needed. Take them out in a separate plate and allow them to cool.
- In a blender grind the first contents well. Next add the fried onions and blend everything together. Add little water if needed.
- Take them out in a serving bowl.
- Heat oil in the skillet and once hot, season them with mustard seed and curry leaf.
- Pour the seasoning over the chutney and give a good mix.
